CHICKEN BREAST PIERRE |

boneless skinless chicken breast
1 4oz
brie cheese
2 oz
breadcrumbs
1 oz
chopped parsley
1 oz
parmesan cheese
3 oz
bechamel sauce
2 oz
white cooking wine
2 oz
whipping cream
1 oz
pesto pastear
SERVES 2 |
- Slit the chicken breast lengthways to make a
pocket across the top.
- Stuff with slices of brie (1/2 brie per chicken
breast).
- Mix breadcrumbs, chopped parsley and parmesan.
- Sprinkle mixture over brie.
- Bake on a greased pan in a 350 degree oven for
10-12 minutes
- Heat bechamel, add pesto and cooking wine.
- Add whipping cream, mix well in sauce and
reduce by half.
- Top the chicken breast with sauce an garnish.
