CHICKEN BREAST PIERRE

Ingredients

 

 

2 5oz boneless skinless chicken breast

1 4oz brie cheese

2 oz breadcrumbs

1 oz chopped parsley

1 oz parmesan cheese

3 oz bechamel sauce

2 oz white cooking wine

2 oz whipping cream

1 oz pesto pastear

          SERVES 2

  1. Slit the chicken breast lengthways to make a pocket across the top.
  2. Stuff with slices of brie (1/2 brie per chicken breast).
  3. Mix breadcrumbs, chopped parsley and parmesan.
  4. Sprinkle mixture over brie.
  5. Bake on a greased pan in a 350 degree oven for 10-12 minutes
  6. Heat bechamel, add pesto and cooking wine.
  7. Add whipping cream, mix well in sauce and reduce by half.
  8. Top the chicken breast with sauce an garnish. (suggested starch - saffron rice)
